Abstract
Il procedimento consiste nel trattare frutti (F) di zucchino (cucurbita pepo) o specie diverse, in una stazione di lavaggio (10), nel convogliare detti frutti ad una cubettatrice (11) e ad un successivo trituratore (12) che riducono i frutti in polpa omogenea, nel trattare detta polpa in un centrifugatore (15) per separare la fase liquida costituita da succo vegetale, nel filtrare-detto succo con un filtro-pressa (16) e con una macchina per ultrafiltrazione (17) e nel trattare in successione il succo filtrato con idrossido di sodio ed eventualmente con sali di ammonio e di bario rispettivamente per aumentare il pH della soluzione, a scopo di solubilizzazione dell'enzima e per purificare l'enzima stesso da residui e cloroplasti.(Riferimento alla figura).
