Described is the composition of diet pasta obtained by adding from 7.2% to 8.8% semi-guar flour and from 0.9% to 1.1% Konjac flour to common durum wheat. The proposed composition guarantees a better quality and acceptability of the product whilst integrally conserving guar pasta dietary efficiency.
