Abstract

A wheat dough with a moisture content of about 16 wt% is extruded through a die. The dough is heated within the barrel of the extruder by the application of pressure without any external heating. The wheat expands as it is extruded through the the die into the atmosphere thus causing steam to flash. Pref. the wheat has 11 per cent protein and is extruded as a rate of 1,000 lbs/hr. Pref. the extrusion head has multiple discharge orifices. The method produces an expanded wheat snack in the shape of a cylinder or curl.
