Abstract
Machine for injecting fluids into meat products comprises a fluid manifold movable toward and away from an underlying support for a meat product and having injecting needles for piercing the meat. A pump and the manifold are operatively connected to supply fluid to the meat product at a rate proportional to the velocity of the needles w.r.t. the product. The supply is effected in response to the sensing of the meat product by a plate which moves with the fluid manifold towards the product. Used for injection of pickle or curing solns. for subsequent curing, e.g. for bellies and other products. The amt. of fluid delivered through the needles is varied in proportion to the varying velocity of the needles as they move into and out of the meat product. The displacement pumps are driven from the same crank which drives the fluid manifold. A stripper plate senses the meat product surface and controls displacement of the pump in accordance with the thickness of the product. The provision of a cam in the drive mechanism makes it possible to provide fluid through the needles both during penetration and withdrawl strokes.
