Abstract

Provided is a fresh pasta that can be frozen and stored for a long period of time and even after thawing retains good appearance and texture comparable to fresh boiled pasta. The fresh pasta has such surface roughness as showing an average Ra of 1.0 10.0 µm and/or an average Ry of 10 50 µm.
