1309596 Autolysis products of fish and crustacea G LAMOTTE 3 April 1970 [4 April 1969] 16094/70 Heading A2B A process for preparing an autolysis product comprising biological principles including at least one growth factor, and free amino acids with or without polypeptides and being free of oil and ammoniacal nitrogen, comprises subjecting fish entrails or a mixture of fish entrails with fish or crustacea in the ground state to autolysis at an initial pH of at least 4 at a temperature of 40-60‹C with stirring, stopping the autolysis by cooling when the pH has reached about 6.5 and separating a liquid autolysis product from the resulting mixture of liquid autolysis product and insoluble autolysis products, all the operations being carried out in the absence of an antiseptic. The separated product may be concentrated in a vacuum dried to a paste or powder. Hydrochloric or acetic acid may be used in the process. The separating may be made by filtration or centrifugation. The process is preferably carried out in an inert atmosphere, e.g. CO 2 . Terpenes, e.g. from lemon, orange or pineapple juices, may be added to the material to be autolysed. The product may comprise aspartic acid, alanine, arginine, cysteine, cystine, glutamic acid, glycine, histidine, isoleucine, leucine, lysine, methionine, phenylalanine, proline, serine, threonine, tyrosine and valine.
