Abstract

Milk prods. combining the properties of cream and cottage-cheese (creamy cottage cheese) are produced by flavouring cream sepd. at 25-70 deg.C having a solids content of 27-33 wt% with salt, inoculating with lactic-acid bacteria, homogenising to a cottage cheese of 15-25 deg.C and comminuting to a particle size of 1-15 mm. The material is layered and fermented at 25-45 deq.C until the pH reaches a value of 4.6-4.8.
