Abstract

The process comprises mixing a base wine with a sugar containing tirage liqueur, inoculating the obtained mixture with yeast and fermenting in closed bottles, then ripened in piles and collecting the sediment in the neck of the bottle by shaking. The sediment is frozen and removed. The volume of the sediment is filled up with liqueur of expedition and the sparkling wine is optionally after-ripened. The wine made of grape varieties permitted in the region of Tokaj. The sediment is frozen and removed. The volume of the sediment is filled up with liqueur of expedition and the sparkling wine is optionally after-ripened. The wine made of grape varieties permitted in the region of Tokaj. The removed sediment is replaced with an expedition liqueur (60-70 volume parts), Szamorodni or old Tokaj wine (5-30 volume parts), essence of old Tokaj wine, Tokaj inversion and/or Tokaj extraction, optionally containing sugar (2-25 volume parts) and citric acid (0.1-0.3 volume parts).
