Abstract

A process for the sterile filling of wine or other non-carbonated beverages into containers, e.g. bottles or cans, comprises heating the container to supply it to the filling device in a sterile condition, heating the beverage to pasteurize or sterilize it, cooling it in a closed system and just prior to filling it into the container, in a back-pressure filling machine, at a temperature about 35 DEG C. lower than the container, adding to it a bactericidal agent which after a limited period of action decomposes into substances compatible with the beverage, e.g. pyrocarbonic acid diethyl ester which decomposes within 12 hours to ethyl alcohol and carbon dioxide, preferably in an amount not more than 0.05 gm. per litre. An enzymatic stabilizing agent or absorbent for the albumen in the beverage may also be added prior to filling; if an enzymatic agent is used it should be at the rate of 0.02-0.08 gm. per litre and if an absorbent is used, e.g. bentonite, activated carbon or silica gel, it should be removed by filtering or centrifuging before filling.
