In a process for the production of fresh water from salt water wherein part of the salt water is frozen by contact with a liquid refrigerant, e.g. butene-1 or iso-butene, to form ice crystals, the unfrozen salt water is removed by centrifuging to leave the ice crystals each covered by a salt water film, the crystals are contacted by the vapour of the refrigerant to form, by melting, a thin film of water between the crystal and the salt water film, and the resultant crystals are centrifuged to separate the residual salt water therefrom. Following contact with the refrigerant vapour, the crystals comprise superimposed layers of fresh water, salt water, and liquid refrigerant, the final centrifuging removing these layers except for part of the fresh water. Batch or continuous processing may be used, and the centrifuge separating forces should preferably be in the range 50 g. to 150 g. Specification 954,926 is referred to.
