Abstract

A nutritional yeast product is made by plasmolyzing yeast cells by sugar and incubating the plasmolyzate with soluble inorganic phosphate to phosphorylate the sugar and vitamins present. 10-15% of sugar, based on the dry weight of yeast, may be used. The phosphate is added in quantity sufficient to supply 10-40%, based on the weight of sugar, of phosphate ion. The incubation is at 25-50 DEG C., preferably at pH 6-7, the sugar may be dextrose, sucrose, corn syrup of 75% solids, filtered honey, lactose, invert sugar syrup of 50% solids, malt syrup of 65% solids. The yeast may be Saccharomyces cerevisiae (baker's, brewer's lager and brewer's ale yeasts), Torulopsis utilis, Candida arborea, Ashbya gossypi, Hansenula suaveolens. Mineral salts, vitamins and amino acids may be incorporated in the products. Examples are of (1) stirring pressed baker's yeast with dextrose, adding water, sodium dihydrogen phosphate and potassium, magnesium and manganese chlorides, and, when no free phosphate is detected, heating to 80 DEG C. and spray drying (2) stirring pressed brewer's yeast with dextrose, adding sodium dihydrogen phosphate, sodium bicarbonate and water, and ferric chloride, manganese chloride and copper carbonate, and, when no free phosphate is detected, heating to 80 DEG C. and spray drying (3) stirring a preparation of packed cells of Torulapsis utilis having 15% yeast solids with crude brown sugar, adding ammonium phosphate, potassium, magnesium and manganese chlorides, sodium acetate, tolulne, thiamine hydrochloride, riboflavin phosphate and pyridoxine, and, when no free phosphate is detected, spray drying.
