952,208. Pasteurising beer and other liquid foodstuffs. STOCKHOLMS BRYGGERIER A.B. Dec. 20, 1960 [Dec. 29, 1959], No. 43800/60. Heading A2D. In preserving liquid foodstuffs, particularly beer, by pasteurisation in a heat exchanger, the pasteurisation process is interrupted for one or more rest periods during which no heating takes place but the liquid foodstuff is kept at substantially constant temperature and during which, also, the liquid foodstuff is submitted to a chemical or physico-chemical treatment in order to improve the chemical stability of the liquid foodstuff. Treatments mentioned: proteolytic enzyme (pepsin); oxygen, air or sulphur dioxide; inert gas such as nitrogen or carbon dioxide; ascorbic acid (Vitamin C) or tannin. Referring to the drawing, beer to be pasteurised is circulated by a pump 11 sequentially through a plate pasteuriser 1, one or more holders 3 which have connections for the introduction and/ or removal of gases, liquids or precipitates formed and are of such dimensions that the holding time will be that desired, plate pasteuriser 1, a further holder 2 and back through the plate pasteuriser 1. In holder(s) 3 the liquid foodstuff is held for 300 seconds at a temperature suitable for an enzyme treatment for improving the protein stability of the beer to take effect viz. 50‹ C., before the liquid foodstuff is subjected to a pasteurisation temperature of 70‹C, for 30 seconds in holder 2.
