A cooked article of predetermined size and shape, of choux pastry is made by enclosing a deposit of choux pastry mixture, of predetermined shape and volume within a two-part mould, one part of which rests on the other, heating the mould to create from moisture in the deposit steam to promote growth of the deposit, and controlling the rate of expulsion of steam from between the mould parts by the growth of the deposit as the growth causes the deposit to assume the shape of the interior of the mould. As shown, the lower part of the mould is a flat tray 3, provided with lugs (not shown) to locate the upper part 5. This upper part comprises several pockets 6, all of the same shape and size. Deposits 1a of cylindrical form are extruded from a nozzle on to the tray 3, and severed by a wire cutter when a sufficient length has been extruded. The upper mould part 5 is then placed on the tray, and the whole put into an oven. During cooking, the space inside each pocket 6 is saturated with steam so that the surface of the pastry remains moist until the deposit has expanded, as shown at 1b, to fill the pocket, when additional steam escapes between the mould parts. In other embodiments not shown, (1) the lower mould part is an endless travelling belt passing through the oven, and (2) the lower mould part has pockets aligned with those of the upper mould part.
