Liquids, e.g. milk, fruit juices, are sterilized by being pumped from an open vat 2 successively through the regenerative and heating sections 5, 6 of a heat-exchanger, a constant low-pressure de-aerating and de-odourizing tank 11, a steam admixing device 13 having a steam inlet 14, a steam removal tank 18 for wholly or partly removing the admixed steam, and then to the regenerative and cooling sections 5, 7 of the exchanger. The tanks 11, 18 have outlets 24, 25 connected to a vacuum pump. A temperature controlled three-way valve 15 operates to return the milk via a pipe 28 to the tank 11, if either insufficient heating takes place in the device 13, e.g. due to lack of steam, or the electricity supply fails, and a further 3-way valve 9, either separately temperature controlled or acting on impulse from the valve 15, returns milk flowing from the exchanger via a pipe 26 back to the vat 2. The valves 9, 15 operate to restore the normal flow when the predetermined temperature is re-attained and are preferably so dimensioned as to maintain the desired temperatures and pressures in the system under normal running conditions, so that throttle valves 10, 16, 27, 29 included in the system for this purpose may be dispensed with.
