Abstract

924,212. Rolling dough. K. SCHMIDT. Aug. 5, 1959 [March 13, 1959; March 28, 1959; June 20, 1959], No. 26671/59. Class 87(2). Ball-shaped lumps of dough which have been produced in a known kneading machine are elongated in apparatus which comprises (i) a kneading frame 5 wherein elongated oval kneading cells are arranged according to the pattern of the cutter in the kneading machine (ii) a forming plate 27 which is vertically guided by pillars 30 projecting from the kneading frame and is pressed downwards by springs 31 and (iii) a kneading plate 1 on which the dough balls 10 are placed, Fig. 9, the plate 1 being located on a kneading base plate 34 which is reciprocable in the direction of the smallest transverse axis of the cells in the kneading frame. The kneading frame 5 is attached to rods 32 which are guided in a cover plate 45 and in an intermediate plate 44 and are connected at their lower ends by a transverse member 43. A shaft 48 is journalled in the frame 46 and carries a lever 51, Fig. 12, in which is a slot 55 which, through a pin, maintains pivotal connection with a bracket 49 on the member 43: there, rotation of the shaft 48 raises or lowers the member 43 and therefore the kneading frame 5. Reciprocation of the base plate 34 is accomplished through a crank drive, 40 being the crank shaft, which is driven by a belt pulley 42. The connection between the crankshaft 40 and the connecting rod 58, pivoted at its other end, to the plate 34, at 33, is variable, i.e. the crank pin 36 is slidable along a member 39 from a position where it coincides with the axis of the crankshaft 40, and thus has no eccentricity, to a position of maximum radius and therefore maximum crank throw. The variation is derived from the shaft 48 through a lever pair 50, also mounted thereon, which engages the lower end of a rod 41 which moves upwards through the hollow crank shaft. On the upper end of the rod 41 is a bell crank 38 arranged so that, when the rod 41 is lowered, the crank radius is increased. In operation a hand lever 59 is depressed, resulting in the forming plate 27 being first lowered to press down lightly on the dough balls. On further downward movement of the lever 59 the rod 41 is drawn downwards against a spring and the crank radius is thereby increased, causing the plate 34, with the kneading plate 1, to be reciprocated with the result that an elongated kneading action is performed on the dough. As the lever 59 is lowered further the pressure increases till the springs 31 yield. The extent to which the kneading requires to be continued can be observed through the forming plate 27, which is of transparent material, and the lever 57 is raised when it is seen to be complete. To adjust the time of commencement of the kneading movement in relation to the lowering of the frame 5, the lever 51 is moved on its boss 52, Fig. 12, as allowed by a slot connection 54. Modifications are described in which the pressure and reciprocation are performed manually.
