Abstract
A milk food for babies is made from cow's milk by reducing the calcium content of cow's milk without substantially altering other salt contents and diluting the calcium-reduced milk with water in the ratio of about two parts of milk to three parts of water, the calcium being removed to an extent such that the diluted milk has a calcium content approximating to that of human milk; it is stated that under these conditions, the milk food will have both calcium and albumen contents approximating to those of human milk and will exhibit, like human milk, the phenomenon of reversibility of the curd at a pH value of 4.5 to 4 under the influence of stomach juice. According to an example, one litre of cow's milk to which there had been added one gram of calcium oxide and two grams of alkali carbonate, was heated to a temperature of approximately 50 DEG to 85 DEG C.; the precipitate produced was separated by filtering or centrifuging. The resulting filtrate was mixed with water, in a ratio of approximately 2 : 3, to which carbohydrates and fats had been added.
