A pair of annular plates 1, 3, Fig. 2, mount toothed steel knives 5, Fig. 3, each having side flanges, engaging grooves 1e in the plate 1, and an oppositely directed flange 5c, engaging a respective groove 3f, Fig. 4, in the plate 3, so that relative rotation of the plates 1, 3 against the action of a return spring 4 closes the knives 5 like an iris diaphragm to cut the shell of an egg located within the plate openings. The plate 3 bears in a ring 2 screw-threaded or snap-attached to the plate 1, and may have a stirrup handle 3b, or each plate may have a radial handle. The elements 1, 2, 3 may be of resilient plastics material.
