In making a frozen confection, the mix is spray frozen at atmospheric pressure to a temperature of not greater than -20‹C. and then compressed at a temperature not greater than -20‹ C. The freezing is effected by a disc revolving at high speed to project the mix into a cold gas, e.g. air.
