Abstract

A non-hazing hydrolysed starch syrup\yCof low dextrose equivalent and low viscosity is made by hydrolysing starch by acid to a dextrose equivalent (proportion per cent of reducing sugars, calculated as dextrose, on the dry matter) of 18-35, treating the hydrolysate with an alpha-amylase preparation for partial hydrolysis of high molecular weight dextrins without substantial increase in dextrose equivalent, and concentrating the product. The enzyme preparation may be derived from Bacillus subtilis or B. mesentericus. The enzyme treatment may be at 50-90 DEG C., at pH 4-10.
