826,711. Shrimps &c. shelling. HENNING, W. Aug. 12, 1957, No. 25412/57. Class 28 (2). A shrimp is passed between rollers 1, 2 and against thin moving knives 4 which cut off the shell at the sides. Further side cutting away of the shell especially at the side of the tail is done by a blade 4, Fig. 3, against which the shrimp is pressed by thin discs 9 on a resilient core, in co-operation with another roller 5. The other side shell is similarly cut off by similar but reversed rollers 5a and 6a. The shrimp is then dried by alternating cold and hot (200‹ C.) air to dry and shrink it from the shell. In this preparation the head and tail roots of the shell are separated from the flesh. The remaining shell parts can be rinsed away by a water or air jet as in Fig. 11. In Fig. 11 the shrimps slide down a shoot 19 in which the edge milling rollers 18 and 19a co-operate with resilient pressing rollers 17 and 17a respectively to slit each side of the shrimp in turn. Air or water nozzles in the shoot detach the shell parts. In Fig. 7 the shrimps 3 pass between rollers 10 and 11, the roller 11 being of elastic foam material and the roller 10 being composed of spaced discs with saw tooth peripheries which saw the shell into strips. The shrimps then fall between rollers 10a and 11a the same as 10 and 11 but interchanged so that the other side of the shrimp shell is sawn into strips which after drying can be blown off by a water or air jet. Other rollers with thorn-like pins on their peripheries may detach the shell parts. The heat drying makes the shell part brittle so that they can be grated or sieved off from the flesh. Arms with barbs interposed beteeen other rollers may also be used to tear off the shell.
