The remaining fish meat is recovered from the bony skeleton of filleted fish by steaming the skeletons, laid on superposed trays 14, in a chamber 20 for one minute and conveying the trays through a cooler 22 to a work-table where girls comb the flesh from the bones and push the meat down one duct 40 and the bones down another duct 37. The bones are ground fine in a screw comminutor 62 and pass into a mixer 48 to mix with the scraped-off flesh. Cornflour, soya flour, with milk powder or eggs may be added in the mixer. The mixture may then be pressed or extruded into moulds 70 and may then be frozen or partially cooked in oil, freed from the moulds and packaged. Fig. 5 shows a skeleton partially combed free of flesh. Fig. 11 shows a finally moulded fish cake. The mixture may be pressed into a sheet from which the fish cakes may be cut out.
