822,904. Preserving and ripening fruit &c. BONOMI, F., and BUEHLER, E. Jan. 9, 1956 [Jan. 8, 1955 (2)], No. 725/56. Class 49. Fruit and other vegetable products are placed in a closed, gastight chamber containing initially a predetermined mixture of gases including oxygen, in a predetermined concentration, and an inert gas such as nitrogen, and the total pressure of the gases is initially adjusted and thereafter maintained so as to preserve or to produce a predetermined rate of ripening; preferably both the concentration of oxygen and the total pressure of the mixture of gases are kept constant and any gaseous carbon dioxide in the chamber is removed. For preservation the concentration of oxygen is preferably relatively low and the total pressure approx. 100-150 cm. water below atmospheric, while for ripening a relatively high oxygen concentration and a total pressure 100-200 cm. water above atmospheric are employed. A metered mixture of gases from a pipe 3 and oxygen fed through pipe 3<SP>1</SP> from a valve 7, electromagnetically operated by a pressure gauge 10, are delivered to a preserving and ripening chamber 1 through a pipe 2 which terminates in a crosspipe 2<SP>1</SP> provided with holes inclined at an angle of 45 degrees towards the interior of the chamber. Carbon dioxide is absorbed by solid calcium hydroxide contained in casing 11 located below a false floor 12 on which fruit for preserving or ripening is placed. Additionally the chamber atmosphere may be circulated via a crosspipe 14, an absorption tower 19 wherein the carbon dioxide is collected for recovery, an aspirator 20 and return pipe 22. Apparatus for conditioning the atmosphere in the chamber comprises a thermostat 47 responsive to the temperature in the chamber and controlling an evaporator 36 of a refrigerating apparatus (not shown), twin helical fans 37 and heat convectors 43 with fans (not shown) through an electrical circuit arrangement.
