Before removing a slicing machine disc knife to be washed a circular guard 16 is attached to cover or overlap the edge, the guard 16 being secured by captive screws 24 on an inner ring 15 joined by spokes 17 to the guard 16. The spokes 17 may be bowed to form handles. The ring 16 may have radial grooves to allow detergent to seep through.
