Abstract
Butter taste and flavour are imparted to margarine and other fat-containing foods by addition of aliphatic lactones having 16 to 22 carbon atoms in the molecule, e.g., stearolactone. Aliphatic lactones having 4 to 14 carbon atoms in the molecule may also be incorporated, preferably in smaller proportion. Gamma-, delta-, and epsilon-lactones are concerned. The total lactone addition for margarine is 1-50 g. per ton. Diacetyl, volatile fatty acids, lactic acid, skatole and indole may also be incorporated. Examples are concerned with incorporating oil solutions of stearolactone, of decalactone and stearolactone, of nonyl lactone, undecalactone and stearolactone, of decalactone, dodecalactone and stearolactone, nonyl lactone, decalactone and undecalactone, in margarine of a mixture of rape seed, coconut, hardened whale and hardened rape seed oils, glyceryl monostearate and lecithin churned with a pasteurized or cultured milk, water, salt, sodium benzoate, sodium bicarbonate and diacetyl, and containing vitamin A, vitamin D2 and carotene oil. Another example is concerned with artificial cream of melted margarine containing glyceryl monostearate, decalactone, undecalactone and stearolactone homogenized with milk.ALSO:Butter taste and flavour are imparted to fat-containing foods by addition of aliphatic lactones having 16 to 22 carbon atoms in the molecule, e.g. stearolactone. Aliphatic lactones having 4 to 14 carbon atoms in the molecule may also be incorporated, preferably in smaller proportion. Gamma-, delta- and epsilon-lactones are concerned. The total lactone addition for margarine is 1-50 g. per ton. Diacetyl, volatile fatty acids, lactic acid, skatole and indole may also be incorporated. Examples refer to making pastry with margarine containing stearolactone, to artificial cream of melted margarine containing glyceryl monostearate, decalactone, undecalactone and stearolactone homogenized with milk, and to incorporation of stearolactone, and mixtures of stearolactone with nonyl, deca-, undeca- and dodecalactones, in margarine made from rape seed, coconut, hardened whale, hardened rape seed oils, glyceryl monostearate, lecithin, milk, water, salt, sodium benzoate, sodium bicarbonate, diacetyl, Vitamin A, Vitamin D2 and carotene oil.
