Abstract

748,161. Veined cheese. LATTERIE INDUSTRIALI RIUNITE LIR ROBBIO. Nov. 2, 1953 [Jan. 22, 1953; Jan. 28, 1953], No. 30191/53. Class 84. [Also in Group V] In making cheese containing clearly distinguishable green veins, a green mould is injected into a cheese melt prior to setting. The mould may be extracted from green-veined cheese which, after removal of the mould, may be used alone or mixed with molten cheese containing few or no green veins, to form the cheese melt. Alternatively, mould grown on cheese fragments may be used. The mould may be forced by a piston 12 through tubes 15 into molten white cheese passing through two or more annular conduits 9. The extruded veined cheese may meet a rotary cutter 5 and may then pass through a spout 6 into moulds 11 in a rotatable plate 7.
