741,357. Chocolate manufacture. LESME, Ltd. Feb. 17, 1953 [Feb. 8, 1952], No. 3401/52. Class 129. [Also in Groups XIII and XXVI] Apparatus for heat treating molten chocolate e.g. prior to moulding, dipping, spreading, coating and similar operations, comprises a pair of rotatable hollow, parallel cylinders 7 having interengaging, axially-extending teeth, a hollow casing substantially enclosing the cylinders and having wall surfaces 6 in close proximity to the teeth of the cylinders and a channel for leading molten chocolate to the pinch of the cylinders so that it is carried round between the cylinders and the casing to a discharge channel for heattreated chocolate provided in the casing, a heat-treating liquid being passed through the casing and the cylinders. In the form shown, the casing comprises two hollow containers I each having a recess to receive one of the cylinders 7. The cylinders are supported at their ends by plates 4 which serve also to close the ends of the containers 1 and to define a channel 5 between the containers. Molten chocolate is introduced at the top of channel 5 and is carried by the cylinders over the recessed wall surfaces 6 and is finally discharged from the bottom of channel 5, cooling fluid such as water being passed through the cylinders 7 and through the containers 1. The inlet temperature of the cooling fluid may be controlled in accordance with the temperature of the treated chocolate as it leaves the apparatus.
