Abstract

Artificial whole milks for feeding cattle and for making cattle cakes are prepared from milk products wholly or partly freed from fat at least, e.g. skim milk, buttermilk and whey, and vegetable or animal fats or oils, a suspension or emulsion of high fat content having the milk product in the disperse phase being first prepared, and this suspension or emulsion being then subjected to phase inversion so that the fat is in the disperse phase.ALSO:Emulsions which resemble milk or cream and which do not break at pH values usual in the employment of milk and cream are prepared from milk products wholly or partly freed from fat at least, e.g. skim milk, buttermilk and whey, and vegetable and animal fats and oils, a suspension or emulsion of high fat content having the milk product in the disperse phase being first prepared, and this suspension or emulsion being then subjected to phase inversion so that the fat or oil is in the disperse phase. A further quantity of the milk product may be added before the phase inversion. The fat content in the first stage may be between 25 and 80 per cent and in the second stage may be between 5 and 30 per cent. During production, the milk product is preferably incorporated at a temperature 5 to 15 DEG C. above the solidifying temperature of the fat, and the fat is preferably kept at a temperature higher than that of the milk product.
