Abstract
In preserving foods, the natural water content of the food is reduced, at a temperature below that at which cooking takes place, e.g. at 50 DEG C., until 10-75 per cent of the water is removed, e.g. until the initial weight of the food is reduced by 15-40 per cent, and the food so dehydrated is impregnated with a solution of a food preservative substance, e.g. brine, vinegar, sugar syrup, a solution of benzoic acid, salicylic acid, sulphur dioxide, or buffer salts such as sodium, potassium, calcium or magnesium phosphates, acetates, citrates or tartrates. The partially dehydrated food may be cooked. The impregnated food may be canned. Specification 696,023 is referred to.
