Abstract
694,947. Frying apparatus. SMETHURSTS GRIMSBY, Ltd., SWALLOW, M. C., WARD, J. B., and WARD, F. W. Sept. 19, 1950 [Sept. 20, 1949], No. 24119/49. Class 28 (i). [Also in Group XXX] Pieces of foodstuff, e.g. fish, are cooked by enveloping each piece in batter, setting the batter by submerging the pieces in succession in a stream of hot oil, which also moves the pieces away from the point of immersion, and cooking the foodstuff and batter by moving the pieces through hot oil while completely submerged. In the apparatus shown, pieces of fish a are dropped on to paddles 14 attached to a rotatable drum 5 and containing batter scooped up from a trough 2 whereby they are covered with batter and deposited in one end 6 of a trough 7 containing hot oil which is sufficiently deep to prevent the pieces reaching the bottom. The pieces are moved away from the point of immersion partly by circulation of the oil and partly by rigid members on a conveyer 12A until they approach a shallow portion 8 of the trough, when they are engaged by plates 29 of a conveyer 12B and passed through hot oil for cooking purposes, the cooked pieces being finally moved up a sloping end 10 of the trough and deposited on a conveyer 13. The circulation of the oil is produced by a pump 15 communicating with inlets 14a, 14a<SP>1</SP> and 14b, 14b<SP>1</SP> respectively at the deep and shallow ends of the trough, the circulation system being so arranged that fresh oil may be taken in from reservoir 17 or the trough emptied through pipe 23. The conveyers are driven through belt drives by a motor 27 and the plates 29 on conveyer 12B have pieces of chain mail 30 which keep the trough clean. The oil in the trough is heated by individually controlled heaters 33, 34, 35.
