Abstract

<PICT:0658835/III/1> <PICT:0658835/III/2> Liquids such as milk or a solution of coffee, are evaporated by forming a film of the liquid on a moving supporting surface, subjecting the film to the heating effect of infra-red rays, and controlling the temperature of the supporting surface by a liquid on the side opposite to that on which the film is spread, so as to achieve rapid evaporation at a temperature below the boiling point, from the liquid-film, without deterioration of the solids therein. Cylinder 1 which is made of metal, glass or ceramic-coated metal, is rotated on hollow shafts 5, 6 by electric-motor 65. Milk is pumped from tank 74 to constant-level trough 69 which has an open side adjacent the periphery of the cylinder so that a film of milk is formed thereon. Two arcuate, insulated-metal reflectors 15, 16 extend around the cylinder, and focus the rays from electrical infra-red generators 30 evenly over the periphery. Sixteen generators are associated with reflector 15, and eight with reflector 16. Tubes 47, 48 having rows of holes 51 are provided for sucking air through the space between the reflectors and the periphery of the cylinder. Water is pumped from a tank (not shown) into the interior of the cylinder through pipe 55, and is returned to the tank through shaft 5 and tube 53. The temperature of the circulating water is controlled by immersion heaters and a cooling coil in the water-tank. When the temperature of the water approaches 75 DEG to 85 DEG C., the immersion heaters are switched off and a coolant is circulated through the cooling coil. The warm air withdrawn through pipes 47 and 48 may be used to preheat the milk by passing it through coil 82 in feed-tank 74. Dry milk powder is removed from the cylinder by scraper 76, and is collected in bin 77. An embodiment having as infra-red generator, a wall heated by combustion gases from a flame burner, is also described. Specification 566,573 is referred to.
