Abstract
In a process of preparing citric acid by quiet surface fermentation from sugar-containing nutrient solutions, e.g. molasses, with a mould of the usual type, the content of surface-active substances in the solution is reduced to a predetermined optimum before inoculation with the mould. The optimum is determined by series experiments. The reduction may be effected by (1) injecting air and removing the foam; (2) the addition and separation of absorbent substances, e.g. charcoal, activated carbon, bleaching earths, silica, or alumina gel; or (3) precipitation of insoluble substances in the solution and separation thereof, e.g. barium sulphate, insoluble sulphides, hydroxides, carbonates, or other insoluble compounds of the heavy metals or alkaline earths. Examples of the preparation of citric acid from molasses by methods (1), (2) using activated carbon, and (3) precipitating zinc sulphide, are given, and also a comparative example without such methods. Alternatives to molasses are pressed juices and mashes containing saccharified starch.
