Abstract

Rennet preparations are obtained by mixing together at least two portions of rennet extract each containing a body which will react with the body in the other portion or portions when mixed therewith to give, in the absence of a water-soluble salt of an aromatic sulphonic acid, an innocuous readily-filterable precipitate on the freshly-formed surfaces of which the active principles of rennet are adsorbed. Suitable bodies which may be added to each portion are sodium or potassium phosphate and calcium chloride. Preferably the pH is adjusted to between 4 and 5 by the addition of acid. The precipitate formed after filtering is mixed with an eluant such as dilute sodium bicarbonate or disodium phosphate, the active rennet passing into solution which is separated from the absorbent by filtration or centrifuging and the solution is then saturated with salt or ammonium when a precipitate is formed which may be sulphate readily filtered or centrifuged off.
