Abstract

Chocolate tablets or lozenges are formed by passing liquid chocolate between two rotating rollers having their surfaces so shaped that they mutually form the chocolate to the desired shapes, the rollers being kept at such a temperature, e.g. minus 15 to minus 20 DEG C., that the surface of the chocolate in contact with the rollers quickly solidifies. The rollers are preferably kept in an insulated space, the temperature of which is 5 DEG C. lower than that of the rollers, to prevent the formation of ice on the rollers. The chocolates shapes may be removed by a scraper at a point 180 degrees from the point of engagement of the rollers. One or both of the rollers may be mounted to move apart against spring pressure, if the pressure between the rollers exceeds a certain amount.
