640,897. Preserving flowable foods. GOLDEN STATE CO., Ltd. Feb. 17, 1944. No. 2963. Convention date, Dec. 26, 1942. [Class 49] In order to render flowable food containing fat, e.g., milk or egg, resistant to deteriorative oxidation changes on storage after concentrating or drying, the food is subjected initially to heating under such a pressure that no gasification or boiling occurs, is thereupon heated under a pressure so much lower than the pressure during the initial heating that rapid evaporation of moisture from the food and subdivision of the solids thereof into smaller particles take place, the suspension of smaller particles and residual liquid in the vapour and gases so evaporated is then caused to move at a velocity of at least 200 ft./sec., evaporation of moisture from the particles being maintained, and finally this movement is abruptly interrupted. With the apparatus of the drawing, milk, led by a pipe 12 into a direct steam heater 13 and therefrom into a tank 16, and thereby heated in ¢-4 min. to 160‹-260‹F, preferably 230‹F, is introduced by way of a pipe 19 into a chamber 35 at the base of a cylinder 20, where the pressure is less, and the mixture of milk particles and vapour here formed passes upwards through a number of vertical tubes 32 heated by steam introduced into a chamber. 23 which surrounds the tubes and is in open communication with the cylinder 20, and emerges from the upper ends of the tubes to strike a plate 36 in a chamber 28, the milk and milk solids collecting in the chamber 28 flowing by way of a pipe 41 to a second apparatus, similar to the apparatus 20, 23, 28, comprising a cylinder 61, steam chamber 47 and impact chamber 80, and the vapour from the chamber 28 flowing by way of a pipe 44 through a liquid trap 45 to the chamber 47. The Specification as open to inspection under Sect. 91 comprises also the treatment of any oxidizable organic material by causing the material to move at a high velocity and then to impinge forcibly on a surface, thus converting the kinetic energy of the material into heat and so instantaneously volatizing certain constituents of the material. This subject-matter does not appear in the Specification as accepted.
