Abstract
Fats and fatty oils such as menhaden, corn, cottonseed oils, lard, &c. are deodorized by subjecting them to high vacuum distillation, preferably in a molecular still by short unobstructed path technique, removing a fraction containing an appreciable amount of the odoriferous constituents of the fat and then subjecting the fat to vacuum-cum-steam deodorization in order to improve its blandness. The steam treatment may be short, preferably not over 15 minutes, the vacuum about 6-12 mm. mercury abs. pressure and the hot fat may either be passed from the high vacuum still direct to the steam still without intermediate cooling or first passed through a counter-current heat exchanger into a storage tank after leaving the high vacuum still and before entering the steam still. It is stated that by the above process the fat is more effectively deodorized than hitherto, with less expenditure of time and heat and less loss due to hydrolysis of the fat by the steam and that the thermally unstable anti-oxidant and vitamin constituents of the fat are obtained uncontaminated and in higher yield.
