Abstract
In making bread, cakes and pastries from a dough containing liquid, evaporated, condensed or dehydrated whole or skim milk, liquid buttermilk or dehydrated buttermilk, there is added to the dough a mixture of minerals as in milk, of composition per cent: calcium citrate 23.6; mono-potassium phosphate 12.8; sodium chloride 10.6; potassium chloride 9.2; di-potassium phosphate 9.2; tri-calcium phosphate 8.9; di-calcium phosphate 7.4; potassium citrate 5.5; calcium oxide 5.1; magnesium citrate 4.0; di-magnesium phosphate 3.7, this mixture being added in quantity sufficient to produce a dough of pH7. After adjustment of the dough to pH7 there may be added a medium in which lactic acid-producing bacteria, e.g., B.bulgaricus, have been allowed to proliferate, in quantity sufficient to produce a dough of pH 4.7-4.8, and a small quantity of diastatic enzyme, e.g., as diastatic malt may be added. Defatted soya bean powder also may be incorporated in the dough.
