Abstract

Cooking or frying oil such as olive oil, peanut oil or cottonseed oil which has been used for cooking fish for tinning is purified by emulsifying with water, which may be slightly acid or alkaline and then mechanically separating into a purified oil phase and a stable emulsion containing the fish fat impurities. In an example, peanut oil containing 4 per cent. of sardine fat, which has been used for cooking sardines, yields after emulsification and separation 92 per cent. of a limpid and clear oil containing 0.25 per cent. of sardine fat suitable for further cooking operations. The used oil may be subjected to preliminary treatment with steam, which may be superheated, and the emulsion may be formed by atomizing the oil with steam and condensing the bulk of the mist so formed while volatile foreign substances are carried away with the excess steam.
