Abstract

In the production of alkali or alkaline earth lactates by the reaction of alkalies or alkaline earths on saccharides, the saccharide is added periodically or continuously to the alkali or alkaline earth so that at any time throughout the reaction or throughout the greater part of it there is a considerable excess of alkali or alkaline earth over the quantity of unchanged saccharide present. The saccharide may be a monosaccharide or an oligosaccharide. Examples describe the treatment of sucrose, dextrose and lactose. Specification 579,969 is referred to.
