Abstract

Protein is obtained from grass, herbage and other leaves by comminuting the material, separating the sap and precipitating the protein therein by heating, adding acid, or adding an alkaline substance. In the first two cases, the precipitated protein is then washed with an alkaline solution to improve the taste, and this washing may also be used in the last case. The product is green, but the colour may be removed by extraction with a solvent such as acetone; on evaporation of the solvent, the residue, containing chlorophyll and carotenoids, may be used as a source of vitamins or as an ingredient in balanced rations. The precipitated protein decolorized or not, may be fermented anaerobically to produce a cheese-like product as described in Specification 511,525, [Group VI], and the mother-liquor, owing to its content of sugar, nitrogen and mineral matter may be used as a substrate for the growth of yeast. Examples describe the extraction of protein from grass sap. When hydrochloric acid is the precipitant, the washing is effected with sodium bicarbonate solution.ALSO:Protein is obtained from grass, herbage and other leaves by comminuting the material, separating the sap and precipitating the protein therein by heating or by adding an acid or an alkali, the precipitated protein being then washed with an alkaline solution to improve the taste.
