Abstract

550,539. Baking powders &c. DU PONT DE NEMOURS & CO., E. I., and WOODHOUSE, J. C. July 11, 1941, No. 8787. [Class 49] A leavening agent is made by mixing a baking carbonate and an edible inorganic acid ester of an aliphatic hydroxy carboxylic acid and/or an edible salt, amide or ester of an inorganic acid ester of an aliphatic hydroxy carboxylic acid. It is stated that such leavening agent will, as compared with known leavening agents, produce biscuits, cakes, &c. of mproved symmetry, bloom, crust colour, grain, texture and flavour. Use may be made of an edible sulphuric-acid or phosphorus-acid ester of hydroxy acetic, lactic, citric or tartaric acid, or an edible salt, amide or ester of such esters, and there may be incorporated in the mixture one or more of the following substances: hydroxyacetic, polyhydroxyacetic, citric, tartaric, adipic acids, the acid sodium, ammonium and calcium salts of such acids, their neutral calcium salts, cream of tartar, calcium acid phosphate, sodium acid phosphate, sodium aluminium sulphate. Other ingredients such as corn starch, rice, potato starch may be included.
