[Class 49] A process of preserving food comprises placing the cleaned food product in a flexible container of impervious material capable of being sealed by heatsealing this container and placing it in a rigid closely, confining cooking container which prevents the flexible container from being ruptured by the internal pressure generated during the cooking, and then subjecting the rigid container to heat to cook the food. The cooking container is subsequently cooled and the flexible container removed therefrom. The flexible container may be made of chlorinated rubber, such as the material known under the Registered Trade Mark " Pliofilm," or of transparent or opaque heat-sealing paper products. The charged and sealed containers are placed in side-by-side compartments in a vessel having a pressure-tight lid retained in position by pivoted screw-clips, and after cooking and cooling are removed from the compartments and placed in carriers constructed of rigid board or chip board. Alternatively, the containers are superposed in a deep confining vessel, adjacent containers being separated by sheets of paper. The separator sheets may be dispensed with by making the flexible container of laminated sheet, the inner ply being of " Pliofilm " and the outer ply of paper or other suitable non-sticking material. Inspection windows may be formed in the outer ply, the transparent inner ply permitting inspection. Food products requiring cooking in a partial vacuum, commercially known as dry pack, are placed in the flexible container and the required vacuum drawn,.following which the containers are hermetically sealed and subjected to cooking and cooling as before. The flexible containers are now placed in the carrier containers, or they may be first placed in the latter and cooked until done and thoroughly sterilized. When the food is to be used, the flexible containers are heated in boiling water, opened and the food is served.
