Abstract
A food preparation is obtained from dates by reducing the dates to a paste or, by addition of water or other liquid, to liquid form, drying in a vacuum desiccator heated to a temperature not exceeding 50 DEG C. and mixing the date powder obtained with a preservative, e.g. calcined magnesia, and with alimentary substances, e.g. powdered cacao nut, rice powder, fecula or starch from potatoes or groats, powdered sugar or tapioca or manioc flour. Vanilla, orange or lemon extract or other flavouring substance may also be added. The dates may be freed from the stones and spread in the form of a slightly tacky paste in a layer of about 2/5 in. thickness on one or more plates in the vacuum desiccator in which they may be kept 3-7 hours. In another form, the paste is diluted with water &c. to a liquid which is introduced into the desiccator in one or more streams which impinge on a disc rotating at high speed, e.g. 600 r.p.m., the liquid being projected on to the heated inner wall of the desiccator. In a further form, the dates are, prior to desiccation, soaked in water &c. to make them swell, freed from the stones and crushed to a paste which is then diluted to liquid form. Examples of the proportions of the ingredients used in making the preparation are given.
