Abstract
494,388. Preserving foodstuffs. NOTHIGER, WULLSCHLEGER, & CIE. Feb. 10, 1938, No. 4242. Convention date, Feb. 13, 1937. [Class 49] Apparatus for preserving foodstuffs, especially meat and cheese, comprises a pressure chamber 1 in which the preservative treatment is effected, an electrically operated air-compressor 4 and a brine supply tank 2 for supplying compressed air and brine respectively to the chamber 1, and connecting conduits 16-19, controlled by cut-off valves 9, 10, 11, 21, and a pressure regulator 6 inserted in a conduit which joins a conduit 18 connecting the upper spaces of chamber 1 and tank 2 and controlling a relay 5 for operating the electric motor driving compressor 4 in such way that when two predetermined pressure limits are reached the motor is switched on or off. As shown, a separator 3 for preventing entry of oil into chamber 1 and tank 2 is provided in conduit 18 and carries regulator 6. The meat or cheese to be pickled is placed on perforated trays 15 in chamber 1 and brine is supplied from tank 2 by opening valve 9, air escaping from chamber 1 through a vent 22. Valve 9 and vent 22 are then closed and compressed air is supplied to the chamber by opening valve 21 until the predetermined limit is reached. As pressure falls through absorption of the brine by the foodstuff, the regulator 6 is actuated and operates relay 5 which switches on the compressor motor, the compressor being again cut off when the predetermined limit of pressure is attained, this procedure being repeated until saturation is attained as shown in a pressure gauge 7. The brine is then returned through conduit 17 to tank 2 by the compressed air. The supply of air may be continued to effect drying of the foodstuffs.
