Abstract

Liquid and semi-liquid foodstuffs, more especially dairy products such as fresh, condensed or skim milk, cream and butter, and meat broth, meat and cheese pastes, oil emulsions and mayonnaises, are preserved by first freeing the material from dissolved gases, enclosing it in an atmosphere of undiluted oxygen under pressure, the pressure not exceeding 20 ats. and being preferably about 8 to 12 ats., the material being heated in this atmosphere to a temperature at which no change in the physico-chemical properties or taste occurs, allowing the material to cool down or cooling it artificially while keeping it in the atmosphere of oxygen under pressure and then storing it in this atmosphere. The heating may be at temperatures up to 80 DEG C., preferably at 50-65 DEG C. Higher temperatures and pressures and longer heating periods are used with materials of higher than with those of lower nutriment contents. The material may be freed from gases by forcing oxygen through it. Examples of the treatment of meat broth, whole milk and evaporated or condensed milk are given.
