[Class 28 (ii)] In a slicing-machine of the kind wherein a rotarv knife is mounted in a carrier which is movable, to-and-fro, across the substance to be sliced, the knife carrier is connectible to the knife-rotating mechanism so as to receive driving force therefrom, by a member which is displaceable into and out of drivetransmitting relationship between the said mechanism and the knife carrier. As shown, the invention is applied to a machine having a V-sectioned substance holder 30 arranged at an angle to the vertical and a knife-carrying arm 13 pivoted to the machine base at 15 and arranged at a corresponding angle to the horizontal. The knife 12 is driven bv chain and sprocket means from the shaft 15 which is driven through worm-gearing by a motor in the base. The weight of the arm 13 is supported by rollers 29 bearing on a stationary arcuate guide 28, the inner face 28a of which constitutes a friction drive surface for a roller 20 on a shaft carrying a jockey sprocket wheel 19 driven by the knife-driving chain. The shaft of the wheel 19 and roller 20 is journalled in an arm 24 pivoted at 25 on the arm 13, and connected by a link 26 to a hand lever 27 pivoted on the knife axis. At the beginning of the slicing stroke, the lever 27 is pushed towards the holder 30, the roller 20 thus being pressed against its friction surface 28a. The roller 20, being rotated by the sprocket 19, thus assists the slicing stroke of the knife arm 13. On the return stroke, the lever 27 is pulled, and the roller 20 is withdrawn from the surface 28a. In a modification, an inner and outer friction surface 28a is provided, the roller 20 being moved by the operation of the lever 27 into contact with the inner surface at the commencement of the return stroke, which is thereby assisted. In a further modification, in a machine in which the roller 20 assists the slicing and return strokes, the roller is displaced from the outer to the inner surface, or vice versa, by adjustable cam surfaces at the ends of the surfaces. The . roller is held against each surface, in turn, by a roller mounted on a telescopic spring- box secured to the arm 13, which roller engages one side or the other of a sharp hump on the boss in which the shaft of the sprocket 19 and roller 20 is journalled. The roller 20 is moved from one surface 28a to the other by the end cams, the arm 24 carrying the roller being thus swung so that the hump passes the spring-box roller which holds the arm and roller in the new position. The roller 20 and the surface or surfaces 28a may be replaced by a toothed wheel and a rack or racks.
