Abstract

The process described in the parent Specification is modified by mixing with the milk a sugar other than that produced as set forth in that Specification, the milk being partially evaporated before or after the addition of the sugar, acid, e.g. citric acid, being added after the partial evaporation in sufficient quantity to cause curdling, a protective colloid, e.g. pectin or substances containing it, starch or its higher degradation products, cornflour or gum and glue-like mucilages being also added prior to or at the same time as the acid, the mixture being finally evaporated to dryness. Acid in quantity insufficient to cause curdling may be added prior to the partial evaporation or prior to addition of the protective colloid. In an example, the sugar in solution which may be slightly acidified is added to pasteurized milk and the mixture concentrated under vacuum as rapidly as possible until the water content is about 20-30 per cent and slowly cooled. A solution of pectin, citric acid and sugar is made, with stirring in water at 90-100 DEG C., or by adding the mixed ingredients to cold water and heating with continuous stirring. A small amount of saccharine may also be added. The acid jelly obtained on cooling is mixed with continuous stirring and kneading with the sugar and milk concentrate until a stiff mass has been formed, the mass being then dried and ground. The Specification as open to inspection under Sect. 91 comprises also the use of wheat gluten as the protective colloid and the addition of citric acid in the form of lemon juice. This subject-matter does not appear in the Specification as accepted.
