Abstract

Foods and beverages especially those containing albumenoid or proteid matter are preserved by adding thereto yerba mat<\>ae or an infusion, extract or essence thereof. The mat<\>ae leaf is preferably prepared by drying at a low temperature. An extract may be obtained by immersing the ground leaf in cold water for 3-12 hours and then gradually raising the temperature to about 75 DEG C. To obtain a concentrated infusion the temperature is raised to evaporation point, about 85 DEG C., with stirring and the liquid strained off when extraction is completed and the concentration continued. A concentrated infusion in milk may similarly be prepared, the leaf being first immersed in a small amount of water for about an hour and the mixture added to the milk.
