Abstract
<PICT:0409859/III/1> A process of making artificial cream using salt butter comprises mixing the butter with hot water in the container of a container-pump type emulsifying apparatus, draining off the water from the floating desalted butter, adding the requisite amount of milk and pumping the mixture through the emulsifying <PICT:0409859/III/2> <PICT:0409859/III/3> passage. Apparatus suitable for carrying out the process and for general emulsifying comprises a container 32, Fig. 2, screwed into a stand 30 and having screwed into it a pump barrel 34 with lateral ports 34<A>. A plunger 37 within the barrel carries an annular saucer-like agitating paddle 38 and is operated by a lever 39 pivoted at 40 to the container. The barrel 34 carries at its lower end a screw nozzle 36 enclosing a spring-pressed needle-type emulsifying valve 35 engaging a seating 33 in the barrel. Hot water added to the butter in the container 32 is drained off by raising the plunger 34 and unscrewing or removing the nozzle 36. Another form of apparatus, Fig. 3, comprises a glass or other container 41, screwed into a flange 42 of a base 43, a washer 42<A>, and if desired a gauze filter also, being interposed. The base 43 has a pipe 44 leading to a pump barrel 47 on a separate or integral part of the base. A plunger 48 is reciprocated through a link 49 by a lever 50 connected by a detachable pin 51 with an upright 52 on the pipe 44. The pin 52 preferably comprises a wire so bent around the upright 52 as to permit detachment only with the lever 50 in its uppermost position. The container 41 is provided with a removable cover 41<B>. The pipe 44 leads to a passage 45 having opening p therefrom a drain passage 45<A>, Fig. 4, closed by a plug 45<B> except during removal of the desalting water. Action of the pump draws in mixture through a ball valve and expels it through a passage 53, an emulsifying element, and a delivery tube 57. The emulsifying element may comprise a coil spring 56 compressed between the tube 57 and a spigot 55 with a laterally-opening passage 54, the materials being forced radially through the coils of the spring. In a modified form of apparatus the pump barrel and the container are supported on a single base and the barrel has a lining member with an internal shoulder. A coil spring is held between the shoulder and the plunger; the plunger is pressed down by a lever, resting thereon and pivoted to an offset portion of the pump barrel, and is returned by the spring. The desalting water is drawn off through a lateral passage in the base, controlled by a tap, and the mixture, drawn into the barrel past a ball-valve, is expelled therefrom through a lateral port leading to an emulsifying element. The Provisional Specification describes an apparatus comprising a pump barrel extending through the base of a glass container, a spring-pressed plunger and a tapered spring-pressed valve in the barrel and a byepass passage, for draining off the hot water, opened by rotation of the delivery nozzle on the barrel.
