Abstract

In the production of cheese, less than 2 per cent of a natural phosphatide, e.g. lecithin, is added to the freshly prepared curd, or at a subsequent stage in the manufacture of the cheese. In the case of a processed cheese, the phosphatide may be added before, during or after the processing operation. The phosphatide may be employed in admixture with oil, stearin or the like.ALSO:In the production of cheese, less than 2 per cent of a natural phosphatide, e.g. lecithin, is added to the freshly prepared curd, or at a subsequent stage in the manufacture of the cheese.
