[Class 29.] The cream is frozen in a can c supported in a brine tank having a cooling coil b by a carrier d rotated through worm-gearing f by a pulley h. After completion of the freezing operation, the beater frame n is removed and the can placed in a carrier o so that the frozen cream is hardened by the brine which is in direct contact with the can. Upon completion of the hardening process, the can is replaced in the carrier d and the cream whipped before transference to the storage can p.
